The Brazil nut tree is enormous, frequently attaining the height of 40 to 50 m or more, reaching ages of 500-800 years old. The tree is found throughout the Amazon rainforest in Brazil, Peru, Colombia, Venezuela, and Ecuador. The fruit is a large, round woody capsule or pod, about the size of a large grapefruit and weighing up to 2.2 kg. The fruit pods grow at the ends of thick branches, then ripen and fall from the tree from January to June, usually with a loud crashing sound as they fall 150 feet through the canopy like cannon balls. Inside each fruit pod, wedged in like orange segments, are 12 to 25 Brazil nuts, each within its own individual shell. Mature Brazil nut trees can produce approximately 300 or more of these fruit pods annually.

Sultanas belong to the grapevine family  and are native to the Caspian Sea.
Currants, sultanas and raisins, including those still on the bunch, are known collectively as "raisins.
The difference between these three dried fruits is explained below:

Sultanas: seedless, large-berried and light yellow.
Larger than currants and smaller than raisins.
Currants: seedless, small-berried, purple/black color.
Their name derives from the Greek city of Corinth.
Raisins on the bunch: seeded, large-berried, generally with stalk.

The grapes are grown on the sultana grapevine. The grapes are harvested when overripe.
They are then either air-dried or increasingly dried in special drying plants.
Most sultanas are bleached, sulfured after drying and mechanically destalked in order to extend their storage life and prevent subsequent discoloration. Such treatment must be indicated appropriately on the packaging.

Tamarind (makahm): The reddish brown, curved seed pods of a lovely tropical tree hold several large seeds encased by moist, sticky, dark brown flesh that varies from being very sweet to very sour. The latter is used as one of the primary souring agents in Thai cooking, imparting a delicious fruity tartness to soups, salads, stir-fries and sauces. Although imported, fresh tamarind pods can often be found in Southeast Asian markets, much of them are sweet tamarind (makahm wahn), which may not have even the slightest hint of sourness. It is a delicacy that is snacked on like fruit.

The 3 - 8 inch long, brown, irregularly curved pods are borne in abundance along the new branches. As the pods mature, they fill out somewhat and the juicy, acidulous pulp turns brown or reddish-brown. When fully ripe, the shells are brittle and easily broken. The pulp dehydrates to a sticky paste enclosed by a few coarse stands of fiber. The pods may contain from 1 to 12 large, flat, glossy brown, obovate seeds embedded in the brown, edible pulp. The pulp has a pleasing sweet/sour flavor and is high in both acid and sugar. It is also rich in vitamin B and high in calcium.


Recipe Idea

Sweet Tamarind Chutney

INGREDIENTS:

  • 1 tablespoon canola oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon ground ginger
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon fennel seeds
  • 1/2 teaspoon asafoetida powder
  • 1/2 teaspoon garam masala
  • 2 cups water
  • 1 1/8 cups white sugar
  • 3 tablespoons tamarind paste
DIRECTIONS:
  1. Heat the oil in a saucepan over medium heat. Add the cumin seeds, ginger, cayenne pepper, fennel seeds, asafoetida powder, and garam masala; cook and stir for about 2 minutes to release the flavors.
  2. Stir the water into the pan with the spices along with the sugar and tamarind paste. Bring to a boil, then simmer over low heat until the mixture turns a deep chocolaty brown and is thick enough to coat the back of a metal spoon. This should take 20 to 30 minutes. The sauce will be thin, but it will thicken upon cooling.

Walnut trees thrive in temperate zones and require deep but well drained alluvial type soils.  After an orchard is planted, it takes approximately seven years before its first yield however, once established it will continue to bear quality fruit for as long as 100 years.
