The Brazil nut tree is enormous, frequently attaining the height of 40 to 50 m or more, reaching ages of 500-800 years old. The tree is found throughout the Amazon rainforest in Brazil, Peru, Colombia, Venezuela, and Ecuador. The fruit is a large, round woody capsule or pod, about the size of a large grapefruit and weighing up to 2.2 kg. The fruit pods grow at the ends of thick branches, then ripen and fall from the tree from January to June, usually with a loud crashing sound as they fall 150 feet through the canopy like cannon balls. Inside each fruit pod, wedged in like orange segments, are 12 to 25 Brazil nuts, each within its own individual shell. Mature Brazil nut trees can produce approximately 300 or more of these fruit pods annually.

Also known as groundnuts or monkey nuts, peanuts are actually legumes. Of South American origin, it's now an important crop all over the tropics and southern USA. It gets its name groundnut because as the pods ripen, they are actually forced underground. Peanuts are high in protein. Whole peanuts can be eaten raw or roasted or made into peanut butter. 100g peanuts contain 24.3g protein, 2mg iron and 3mg zinc.

The distinctive green colour of pistachios makes them ideal for adding colour, as well as flavour and texture to ice creams and sweets.
To store: Keep unopened packets of pistachio nuts in a cool, dark place for up to 3 months, once opened store in an airtight container and use within 1 week.

Currants, sultanas and raisins, including those still on the bunch, are known collectively as "raisins.
The difference between these three dried fruits is explained below:

Currants: seedless, small-berried, purple/black color.
Their name derives from the Greek city of Corinth.

Most sultanas are bleached, sulfured after drying and mechanically destalked in order to extend their storage life and prevent subsequent discoloration. Such treatment must be indicated appropriately on the packaging.
Treatment with vegetable oils is intended to prevent the sultanas from sticking together.

Due to their very high sugar content, sultanas are very sweet and similar in flavor to honey.

Walnut trees thrive in temperate zones and require deep but well drained alluvial type soils.  After an orchard is planted, it takes approximately seven years before its first yield however, once established it will continue to bear quality fruit for as long as 100 years.
