Arrowroot is a fine white powder that is extracted from the root of a tropical plant also known as arrowroot.

It is often used to thicken puddings, sauces,glazes and other cooked foods. Arrowroot is more easily digested than wheat flour and has about twice the thickening power. Unlike corn starch which tastes chalky if undercooked, arrowroot is tasteless and becomes clear when cooked - ideal therefore when making deserts.

A useful alternative where there is a wheat allergy. Also use as a substitute for corn starch.

Tropical Sun Baking Powder - 150 grams

Baking Powder is a raising agent; it is used to lighten the texture and increase the volume of baked goods.

When mixed with liquid, baking powder causes a bread or cake to rise by forming carbon dioxide bubbles.

Tropical Sun Bicarbonate of Soda - 200 grams

Also known as baking soda, it is a rasing agent, used to lighten the texture and increase the volume of baked goods.

When combined with acidic ingredients such as cream of tartar, buttermilk, yoghurt or molasses, it caused carbon dioxide bubbles to be released. These bubbles in turn make dough or batter rise whilst baking.

Rajah Cassia Bark 50 grams

Cassia (Cinnamomum cassia) - cassia bark comes from a SE Asian plant of the laurel family. It has a sweet fragrance similar to cinnamon, but is coarser and cooks better. It is used extensively in Northern Indian cookery.

The bark is generally removed from the food before serving as it is too coarse to eat. It can also be used as a ground spice.

There are many different varieties of chilli; Mexico alone has 100 kinds, and they vary greatly in colour, heat and pungency. Rajah crushed red chillies are selected for their consistent heat and colour.

Originally from Sri Lanka, it is now grown in India, Indonesia, the west indies and Indian Ocean islands. The spice, can be added to both sweet and savoury dishes.

Don't get this confused with the bark of the Cassia, which although is part of the laurel family is usually called Chinese Cinnamon.
