2: Mix until free from lumps. Add salt if required
3: Pour into a cooking pot and place over a moderate heat
4: Stir vigorously with a wooden ladle until thick and smooth - more water if softer consistency required
5: Mould into balls and serve with soup or stew of choice - such as palmnut, okro, vegetable

White Gari is made from fresh cassava, which is grated and the excess liquid is then squeezed out. The remaining cassava is then fried with over an open fire, on a broad metal pan that has been greased with a little oil, could be palm oil or other vegetable fat.

The result product is crisp and crunchy to taste, and is stored easily and can be eaten with stew or soup or shito and fish. Or in secondary schools it can be soaked with water milk and sugar.

Yellow Gari is a West African staple traditionally made from fermented, gelatinised cassava tubers.

Because most varieties of cassava contain toxins that must be eradicated before they can be eaten, cassava is generally not eaten raw. Fresh cassava is processed into yellow gari just a few days after harvest otherwise it is no longer suitable for consumption.

Yellow Gari is usually a popular accompaniment to a vegetable or fish stew.

Tradionally prepared from fermented dough, wrapped and cooked in traditional corn husk for full flavour, and specially packed to retain freshness.


Kenkey is one of the principal fermented foods consumed in Ghana. It is prepared from fermented ground white corn (maize). To prepare kenkey, the corn has to be ground first into flour and mixed with warm water, followed by fermentation (for two to three days) into maize dough.

The fermented dough is kneaded with the hands until it is thoroughly mixed and slightly stiffened, after which it is divided into two equal parts. One part of the fermented dough is partially cooked in a large pot of water for about ten minutes, stirring constantly and vigorously, after which it is combined with the remaining uncooked dough and mixed well. The cooked half of the dough is called “aflata”. The aflata-dough mixture is divided into serving-sized pieces and wrapped tightly in banana leaves, cornhusks, or foil. The wrapped dough packets are placed on a wire rack above water in a large pot and allowed to boil and steam for one to three hours, depending on their size and thickness.

The final product, kenkey is served with a sauce or any fish or meat dish.
