Serves 4

Ingredients

Used 20large Raw shrimp, peeled and de-veined
500g/1lb Lobster, shelled, flesh cubed
2tbsp olive oil
2stalks Escallion, chopped
3plum Tomatoes, peeled and chopped
3cloves Garlic, crushed
1/2tsp Saffron strands
1/2 lime, juiced
12oz Walkerswood Rundown Sauce
2tsp Thyme, chopped
2tbsp Parsley, chopped
Salt and freshly ground black pepper , to taste

Directions

Prepare the shrimp and lobster. Heat oil in a saucepan over moderate heat.

Saute escallion, tomatoes, and add garlic, saffron, shrimp, lobster, salt, black pepper and simmer (do not boil).

Stir in chopped herbs and cook for 5 minutes.

Adjust the salt and pepper to taste.
