Jerk Chicken

Makes 6 servings.

Ingredients:

2 pounds chicken pieces

1 tablespoon of jerk seasoning rubbed in well.

 

Method:

Wash and prepare chicken.

Pour seasoning over chicken; cover. Refrigerate 1 hour or more to marinate, or overnight.

Drain and discard seasoning mixture.
Place on greased grill over hot coals or on rack of grill pan 5-7 inches from heat.

Grill 40-45 minutes or until cooked through, turning frequently. (Or bake in on gas mark 5 for 1 hour)

Prep Time: 10 minutes plus marinating.

Grilling time: 45 minutes.

Baking time: 1 hour
