Curry Goat

Curry Goat
(or mutton, lamb, beef)

Ingredients

2 pounds goat meat (or mutton,lamb,beef)
1/2 cup onions — sliced
1 stalk spring onion
2 cloves garlic — finely chopped
1 tablespoon salt
1 tablespoon black pepper
2 1/2 tablespoons curry powder
1 hot peppers — fin
2 tablespoons oil
1 teaspoon lime juice
6 cups boiling water
1/2 cup coconut milk
2 ounces butter
1 teaspoon sugar
1 sprig thyme


Directions

Wash goat meat and cut in pieces, sprinkle with salt and pepper.

Add curry, spring onion, onion, garlic and hot pepper. Work these into the meat.

Cover, let stand for 1 1/2 hours.

Heat the oil. Add meat and seasonings, sprinkle lime juice over.

Fry lightly for five minutes, stirring.

Add 4 cups boiling water, and simmer, covered, 1 1/2 - 2 hours or until meat is tender, stirring from time to time.

Add water as needed.

Add coconut milk, margarine, sugar and thyme. Cook for five minutes more.

Serving Suggestion:

Serve accompanied by plain white rice, roti or rice and peas
